The perfect way to spice up those dull mid-week breakfasts. Menemen is a much-loved Turkish breakfast made with scrambled eggs, tomatoes, green peppers, onions, and spices. Delicious, hearty, and easy – what’s not to like?
Ingredients
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 1 large green pepper, diced
- 2 large tomatoes, diced
- 4-6 large eggs
- 1 teaspoon ground cumin
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
- Fresh parsley for garnish
- Crusty bread for serving (gluten-free option available)
Method
- Heat the olive oil in a large frying pan over medium heat. Add the sliced onions and diced green peppers. Cook until they soften, about 5 minutes.
- Stir in the diced tomatoes, ground cumin, red pepper flakes, salt, and pepper. Let the mixture cook for another 5 minutes until the tomatoes release their juices.
- Make small wells in the mixture and crack the eggs into each well. Scramble the eggs gently with a fork and mix them with the vegetables.
- Cook until the eggs are set to your desired consistency.
- Garnish with fresh parsley and serve with crusty bread.
