Tiramisu: luscious layers of indulgence

This yummy Italian dessert could just be my favourite. Layers of rich mascarpone, coffee-soaked ladyfingers, and cocoa powder give a perfect hit of indulgent joy. Whatever the occasion, you can enjoy the wonderful harmony of flavours in each spoonful.
Ingredients
- 250g mascarpone cheese
- 3 large eggs, separated
- 100g sugar
- 250ml strong brewed coffee, cooled
- 30ml coffee liqueur (optional)
- 24-30 ladyfinger cookies (savoiardi)
- Unsweetened cocoa powder, for dusting
Method
- In a large mixing bowl, whisk together the mascarpone cheese, egg yolks, and half of the sugar until smooth and creamy.
- In a separate bowl, beat the egg whites with the remaining sugar until stiff peaks form.
- Gently fold the beaten egg whites into the mascarpone mixture until fully combined.
- Combine the cooled coffee and coffee liqueur (if using) in a shallow dish.
- Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them too long.
- Arrange a layer of soaked ladyfingers in the bottom of a serving dish or individual glasses.
- Spread a layer of the mascarpone mixture over the ladyfingers.
- Repeat the layers, finishing with a layer of mascarpone on top.
- Cover and refrigerate the tiramisu for at least 4 hours or overnight to allow the flavours to meld.
- Before serving, dust the top with cocoa powder for the final touch of flavour and elegance.
