Ingredients

  • 150g all-purpose flour
  • 2 large eggs
  • 300ml milk
  • 50ml water
  • 2 tablespoons unsalted butter, melted
  • Pinch of salt
  • Butter or oil for frying

Method

  1. In a mixing bowl, combine the flour and salt. Make a well in the centre and crack in the eggs.
  2. Gradually pour in the milk and water while whisking the mixture to form a smooth, thin batter.
  3. Stir in the melted butter and let the batter rest for 30 minutes to an hour.
  4. Heat a non-stick frying pan over medium heat. Add a small amount of butter or oil to coat the pan.
  5. Pour a ladleful of the crepe batter into the pan, swirling it around to cover the bottom evenly.
  6. Cook the crepe for about 1-2 minutes until the edges start to lift and the bottom turns golden.
  7. Flip the crepe and cook the other side for another 1-2 minutes.
  8. Repeat the process with the remaining batter, stacking the cooked crepes on a plate.

Serve the French crepes with your choice of fillings, such as Nutella, fresh fruits, whipped cream, ham, cheese, or jam.

Authentic Shakshuka: open the door to the Middle East

Shakshuka is a popular dish in Middle Eastern and North African cuisine. My favourite recipe combines poached eggs in a flavourful tomato and pepper sauce, spiced with cumin, paprika, and cayenne pepper. It's traditionally served with crusty bread for dipping, and that’s just the way my kids like it too!

I’ll always remember this sweet treat from my first trip to Sweden as a little girl. Also known as "plättar" or "rårakor", Swedish Pancakes are thin, crepe-like pancakes served with sweet toppings like jam, berries, and powdered sugar. Everything a Scandinavian breakfast should be!
