Ingrédients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 100g chorizo sausage, sliced (choose spicy or mild, depending on your preference)
  • 2 cans (400g each) butter beans, drained and rinsed
  • 200g fresh spinach leaves
  • 1 can (400g) chopped tomatoes
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 4 large eggs
  • Fresh parsley leaves, chopped (for garnish)
  • Crusty bread or toast (for serving)

Méthode

  1. Preheat your oven to 180°C (350°F).
  2. In an oven-safe frying pan, heat the olive oil over medium heat.
  3. Add the chopped onions and fry until they become soft and translucent.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add the sliced chorizo sausage to the pan and cook until it releases its flavours and turns slightly crispy.
  6. Toss in the drained and rinsed butter beans, mixing them well with the chorizo and onions.
  7. Add the fresh spinach leaves to the pan, letting them wilt down as they cook.
  8. Pour in the chopped tomatoes, paprika, cumin, salt, and pepper, stirring everything together.
  9. Let the mixture simmer for about 5 minutes, allowing the flavours to meld and the sauce to thicken slightly.
  10. Create four small wells in the bean and chorizo mixture and crack an egg into each well.
  11. Carefully transfer the frying pan to the preheated oven and bake for about 10-15 minutes or until the egg whites are set, but the yolks are still slightly runny.
  12. Remove the pan from the oven, garnish with chopped fresh parsley, and serve the Butter Bean, Chorizo, and Spinach Baked Eggs straight from the pan.
  13. Enjoy with some crusty bread or toast on the side.
